Step-by-Step Instructions
- 1Prepare the Meyer Lemon & Bergamot Gelée: Bloom gelatin in ice water. In a saucepan, warm citrus juices and sugar until sugar dissolves (60°C). Remove from heat, whisk in squeezed gelatin until melted. Pour into a 16cm round silicone insert mold and blast-chill or freeze solid for 2 hours.
- 2Bake the Pistachio Dacquoise: Preheat oven to 175°C. Sift pistachio flour, almond flour, and confectioners' sugar. Whip egg whites to soft peaks, then slowly add caster sugar to form a glossy, stiff meringue. Gently fold dry ingredients into meringue with sea salt. Spread into an 18cm ring on parchment. Bake 14-16 minutes until springy. Cool completely and trim to a 16cm disc.
- 3Construct the Croquant Layer: Melt 40g white chocolate at 40°C. Mix in Bronte pistachio paste and Maldon salt until smooth. Gently fold in feuilletine flakes. Spread in an even, paper-thin layer directly over the cooled Dacquoise disc. Freeze for 30 minutes to set.
- 4Craft the Pistachio Namelaka: Bloom gelatin. Bring milk and glucose to a simmer. Dissolve gelatin into hot milk. Melt 170g white chocolate and pistachio paste in a bowl. Pour hot milk over chocolate in three additions, creating a shiny emulsion with an immersion blender. Pour in cold heavy cream; blend without introducing air bubbles. Pour Namelaka over the frozen citrus gelée in the 16cm insert mold. Freeze solid for 3 hours.
- 5Prepare the Opalys Velvet Mousse: Bloom gelatin. Bring milk and vanilla bean seeds/pod to a boil, then steep for 10 minutes. Strain milk and bring back to simmer; dissolve bloomed gelatin into it. Pour warm infused milk over 380g melted Opalys chocolate, emulsifying with an immersion blender. Cool mixture to 30°C (86°F). Gently fold in softly whipped cream in three stages using a silicone spatula.
- 6Assemble the Entremet (Inversion Method): In an 18cm round by 5cm high silicone entremet mold (e.g., Silikomart Eclipse or Universo), pipe two-thirds of the Opalys Velvet Mousse, working it up the sides with a spatula to eliminate air pockets. Extract the frozen insert (citrus gelée and pistachio namelaka) and press it centrally into the mousse. Pipe remaining mousse, then cap with the frozen Dacquoise-Croquant disc (croquant side facing down into mousse) level with the rim. Freeze at -24°C for at least 6 hours, preferably overnight.
- 7Cook the Jade Mirror Glaze: Bloom gelatin in cold water. In a heavy saucepan, boil water, glucose, and sugar to precisely 103°C (217°F). Remove from heat, whisk in condensed milk and bloomed gelatin. Place chopped white chocolate and color powders in a tall immersion beaker. Pour hot syrup over chocolate. Submerge immersion blender, hold at an angle to tap out trapped air, and blend on low speed until perfectly smooth, glossy, and airless. Strain through a fine-mesh sieve. Cool to working temperature of 31-32°C (88-90°F).
- 8Glaze and Final Presentation: Unmold the rock-hard frozen entremet and set atop an elevated wire rack over a rimmed sheet pan. Immediately pour the Jade Mirror Glaze steadily over the center, allowing it to sheet down the edges naturally in a single continuous movement. Let set for 3 minutes, then trim glaze drips with an offset spatula. Transfer entremet to a serving pedestal. Rest in refrigerator at 4°C for 4 hours to thaw before serving. Finish by crowning with raw slivered Bronte pistachios and delicate fragments of 24k gold leaf.

CHEF'S GOLDEN BAKING SECRETS:
- Always maintain the immersion blender head fully submerged at the bottom of the beaker when blending the mirror glaze; tilting or breaking the surface creates micro-bubbles that spoil the mirror-like optical reflection.
- Pure Sicilian Bronte Pistachio paste contains no added chlorophyll or dyes; pairing it with Opalys white chocolate enhances its natural herbaceous, sweet volcanic minerality without overpowering its delicate top notes.
- Temperature discipline is paramount: do not glaze the entremet unless the cake core is completely frozen solid (-18°C or colder) and the glaze is strictly between 31°C and 32°C.
- For professional, knife-sharp clean cuts, warm a chef's knife in hot water, wipe completely dry, slice once smoothly from center to perimeter without sawing, and wipe clean between every individual portion.
