Ingredients
(Tap items to cross off as you bake)- 200g French T55 pastry flour (or all-purpose flour)
- 100g European cultured unsalted butter, cold and cubed
- 60g powdered sugar, sifted
- 25g blanched almond flour
- 1 large egg yolk
- 3g sea salt
- 2g green cardamom pods, freshly ground and sifted (divided)
- 4 firm Forelle or Bosc pears, peeled, cored, and very thinly sliced lengthwise on a mandoline
- 500ml water
- 150g dry white wine or verjus
- 180g granulated sugar
- 1 Madagascar vanilla bean, split and scraped
- 1 strip organic lemon peel
- 250g fresh whole-milk sheep's milk ricotta, thoroughly drained overnight
- 120ml heavy whipping cream (36% fat), chilled
- 45g wildflower honey
- 1 tsp orange blossom water
- 2g agar-agar powder
- Micro lemon thyme sprigs and edible 24k gold leaf for garnish
Step-by-Step Instructions
- 1To make the pâte sablée, combine the flour, almond flour, powdered sugar, sea salt, and 1.5g of freshly ground cardamom in a food processor; pulse briefly. Add cold cubed butter and pulse until a fine, sandy texture is achieved.
- 2Add the egg yolk and pulse just until the dough begins to clump together. Turn out onto parchment paper, press into a flat disc, wrap tightly, and chill for at least 1 hour.
- 3Roll the chilled dough between two sheets of parchment paper to 2.5mm thickness. Cut circles and line eight 8cm perforated tart rings. Trim edges flush and freeze the lined rings for 30 minutes.
- 4Preheat oven to 325°F (165°C). Blind-bake the frozen tart shells on a Silpat perforated baking mat for 18-20 minutes until deeply golden and crisp. Remove rings and cool completely on a wire rack.
- 5In a wide saucier, simmer water, white wine, granulated sugar, vanilla bean and seeds, lemon peel, and the remaining 0.5g ground cardamom until sugar dissolves. Lower heat to a gentle poach (80°C/175°F).
- 6Submerge the thinly sliced pears in the poaching liquid for 4-5 minutes until pliable and translucent but not mushy. Remove with a slotted spatula onto a parchment-lined tray to cool. Reserve 150ml of poaching liquid.
- 7Bring the reserved 150ml poaching liquid to a boil with 2g agar-agar, whisking constantly for 1 minute to create a bright cardamom glaze. Set aside to cool slightly to room temperature.
- 8Pass the drained sheep's milk ricotta through a fine-mesh tamis sieve to eliminate graininess. In a chilled bowl, whip heavy cream with wildflower honey and orange blossom water to soft peaks, then gently fold into the sieved ricotta until velvet-smooth. Transfer into a piping bag with a round tip.
- 9To assemble, pipe a precise spiral of the whipped ricotta mousseline into the bottom of each crisp sablée shell. Arrange poached pear slices in concentric overlapping rings starting from the outer edge inward to form a tight, elevated blossom.
- 10Delicately brush the pear rosette with the warm cardamom glaze to provide a high-gloss finish. Garnish delicately with micro lemon thyme and minute flecks of 24k edible gold leaf. Chill for 30 minutes before presenting.
👨🍳 🍳
CHEF'S GOLDEN BAKING SECRETS:
- Draining the sheep's milk ricotta overnight in cheesecloth over a bowl is critical to prevent moisture from compromising the crispness of the sablée.
- Baking on perforated silicone mats and using micro-perforated stainless tart rings allows steam to escape efficiently, ensuring Michelin-grade snap and flat edges.
- Do not allow the poaching liquid to boil vigorously once pear slices are added; aggressive bubbling will break the paper-thin pear edges.
